The local Rillo’s tradition continues, but under new ownership.
“We’re trying to keep the local tradition local,” co-owner Jeff Goss said Tuesday during the restaurant’s ribbon-cutting ceremony.
Goss and Mike Cassidy bought Rillo’s in May from the Rillo family. Joseph “Joey” Rillo Jr., who ran previously ran the restaurant, passed away in December and no other family members wanted to take over the business.
“We couldn’t see this becoming a franchise or steakhouse or anything other than Rillo’s,” Goss said. “We wanted to keep the tradition right here.”
Rillo’s recipes were handed down to the new owners and not much has changed in the dining experience.
“We have the same name, building, recipes and menu,” Goss explained.
The duo has brought back some of the older favorites to the menu and plans to offer fresh fish daily, in addition to local produce.
“We’ll concentrate on our Cumberland County farmers to offer as much local produce as we can,” Goss said.
They’ll also expand the beer list and focus on wines.
There have been some cosmetic improvements to the restaurant, including fresh paint inside and out and new kitchen equipment.
“Joey had a vision for his kitchen and he wanted to renovate it,” Goss said. “We’ve gotten a good start on that.”
Goss and Cassidy are no strangers to running a restaurant. They operate Market Cross Pub restaurants in Carlisle and Shippensburg.
“Our goal is to give the total Rillo’s experience,” Goss said. “We want you to be proud of Rillo’s.”
